OBLIVIO NERO DI TROIA

A wine obtained from “Nero di Troia” grape, that can boast a remarkable personality. Due to the unusual strength of its tannins, a peculiar feature of this grape, the Oblivio needs a special maceration with a fermentation of 28 C, 90% in stainless steel and 10% in French oak barriques. It has intense aroma of black cherries and cherries with hints of spice. Excellent with roasts or aged cheese.



PURPUREUS PRIMITIVO

Grapes are hand-picked from low-yield 30 year old vines, situated in “Gioia del Colle” territory. The thermo-regulated fermentation is characterized by a long maceration with careful pumpovers and delestage. After a brief period in French barriques the wine is refined in bottle for 6 months. It is intensely fruity and spicy, with notes of ripe red fruit, licorice and vanilla. Excellent with roasts, stews or aged cheese.



L’AUREUS CHARDONNAY

Serving temperature: 12-14 °C

Criomaceration at a temperature of 5 C on hand-picked grapes. Soft pressing and controlled fermentation at a temperature of 14 C in stainless steel tanks and in French oak barriques; the wine is then refined on thin dregs for 5 months and periodically submitted to some batonage. Eventually, L’AUREUS is assembled and refined in bottles for at least three months. It is soft and extremely well balanced, with hints of exotic spices. Excellent with fish, seafood and cheese.



RUBEO ROSE

Grape variety: 50% Nero di Troia 50% Bombino Nero
Alcohol: 12,5%
Serving temperature: 12-14 °C

Criomaceration at a temperature of 5 C. Soft pressing and extraction of the must after 5 hours, then controlled fermentation at a temperature of 14 C in stainless steel fermenting tasks. The RUBEO is refined on thin dregs for 3 months with some periodic batonage. Soft and flowery, with a strong hint of rennet. Extremely fresh. Excellent with sushi and sashimi, fish, seafood and white meats.



DUO BIANCO

Grape variety: 70% Chardonnay 30% Garganega
Alcohol: 13%
Serving temperature: 12-14 °C

Fermentation occurs in stainless steel tanks at a temperature of 16 C and then the wine is refined in bottles for three months. It has spicy floral notes with hints of exotic fruits. Pleasantly soft and extremely well balanced. Excellent with fish, seafood and white meats.
